In the context of the European project HealthFerm,The Institute Paul Bocuse Research Center (Lyon, France) and Umeå Universitet are recruiting
1 PhD student in Social science applied to Food, nutrition and culinary field.
The HealthFerm project
Fermented foods are consumed in Europe and across the globe. Especially in the past decades,
fermented foods have been hailed for their nutritional and perceived health benefits. Yet little is
known about the impact of fermentation on human health or how fermentation can be leveraged to
enhance the use of sustainable plant-based raw materials. The new EU research project HealthFerm,
a collaboration of 22 partners from across Europe, will shed light on this forward-looking topic.
HealthFerm is funded through the European Union's Horizon Europe Framework Programme for
Research and Innovation and the Swiss government.
The PhD topic
The PhD (4 years) will focus on uses and representations of plant-based fermented food through an
ethnographic study (observations, recordings, and interviews) in 3 countries representing the EU
geography and cultural differences:
France, Sweden and Romania. The aim is to produce robust
knowledge on social and cultural aspects of fermented foods, their meanings, and their potential as
markers of healthy, sustainable and ethical consumption. The study will include observation and
interviews on-site, collection of data, analysis, and reporting.
Institutional Context
- The early stage researcher will be registered as a PhDstudent at Umeå University (UmU,
Michaud, Institut Paul Bocuse Research Center (IPBR, Lyon, France).

4 years, according to the standards in the Swedish academic system. - Main placement during the first 3 years will be at the IPBRfacility in Écully, France. During the

Job conditions
- Full time position.
- Salary: 27K€/year (gross)
- Partial homeoffice possible, with respect to job responsibilities.

completed a master degree, i.e., completed course requirements of at least 240 ECTS, of which at least
60 ECTS on advanced level, or in any other way within or outside the country acquired essentially
equivalent knowledge.
To fulfill the
special requirement for eligibility to be admitted to graduate level education in PhD
- position in Food, Nutrition and Meal Science requires that the applicant has completed course
and meal science; dietetics; or culinary science. The mastery of social sciences and qualitative research
methods is also required. The special requirement can also be fulfilled by those who have acquired
corresponding knowledge within or outside the country.
Applicants should be able to express themselves well orally and in writing in English, and in at least
one (two appreciated) of these three languages: Swedish, French, Romanian.
