About the Villa
It is a magnificent domaine of 3 hectares including 2 beautiful Villas of 1000 m2 and 700 m2 located in Saint Tropez.
Every single room is unique, decorated and furnished with the best noble pieces of furnitures, art and decoration are everywhere within this fantastic house.
The property belongs to a French family. This is their second home. The owners and their children are extremely respectful and generous.They are very relaxed and chilled, very sporty but also used to very high standard in terms of cuisine and service generally speaking.
They visit the Villa from Mid June / Beginning July until Mid September, for a period of about 3 months.
It is usually just the parents and their children on the property, but they regularly have guests over as well, especially either for lunch or for dinner.
You would be joining the team composed with The Villa Manager and the Head Housekeeper / Assistant Villa Manager and the Chef.
The project
We are looking for
1 Sous Chef ready to start working as of
Beginning May until the mid of September 2023.
You will be in a supporting/assisting role to the resident Head Chef in the Villa, which means you would have intensive hands-on duties.
You would be in charge of
:
- Gathering and accurately measuring all meal ingredients
- Washing & peeling/chopping/dicing vegetables & other items
- Cutting and seasoning different meats
- Preparing basic dishes such as salads and sauces
- Assisting in keeping track of cooking times, temperatures, etc
- Setting up the kitchen station for the Head Chef, etc.
- Sourcing the ingredients, checking inventory in the pantry, etc.
- Maintaining proper hygiene standards and ensuring that the workstation remains clean at all times
- Plating various meal items pastries, teatrays, appetizers, mains, desserts, etc.
- Disposing spoiled food items and expired products
- Accepting deliveries of food items and maintaining a stock record of the same
- Heating plates, setting up plates for the Chef to prepare, assisting him in dressing the plates
- Filling in the dishwashers, emptying them
- Washing up dishes, drying dishes, etc...
Desired profile
- You must be very
autonomous and
able to report and
respect your hierarchy in the same time. - We are looking for someone who is
passionate about service and likes to work in private villas.
Previous experience as a Commis de Cuisine, Chef de partie, Kitchen Help is required.
- You have a High School Diploma or a Bachelor's degree in
Culinary Arts
- You have good knowledge of
food hygiene practices & cooking temperatures/timings.
- You are
flexible and capable to
multitask, able to follow the processes that are already implemented and able to be reactive in difficult situations. If someone in the team needs help, you need to be hands on. The team is very close, and everybody, even the Villa Manager work handinhand. - You are a
smiling person, you like to work in a team and you are
discrete. You have a positive attitude. - You are always on time and present well, you have a real sense of human relations and communication comes with an ease to you.

Salary :
EUR NET euros / month. Depending on profile
Schengen VISA is required to work in France and in private properties.
