Camille LASSAUSSE

Winemaker and oenologist with international experience in France, New Zealand, and the United States. I hold a Diploma National d’Œnologue in France and have hands-on expertise across all stages of winemaking, from harvest logistics to vinification of red, white, and rosé wines. Curious, reliable, and team-oriented, I thrive in dynamic cellar environments and am motivated by producing high-quality, expressive wines while continuously learning from diverse wine regions and teams.

Throughout my career, I have worked in a wide range of regions and production contexts, both in France and internationally. My experience includes internships in Champagne (Champagne Bollinger), Burgundy (Domaine Chanson), Bordeaux especially Sauternes), and Alsace (Antoine Stoffel Estate). I also spent three months for a winemaking internship in Virginia, USA (The King Family Vineyard), and be part of a winemaking team in New Zealand (Allan Scott Family Winemakers), expanding my international expertise. Most recently, I have worked as Harvest Supervisor at the Cave de Tain in Rhone Valley (France), where I coordinated cellar teams, supervised daily harvest operations, ensured wine quality, and managed equipment and processes.

The Diplôme National d’Œnologue is a highly specialized postgraduate qualification in winemaking and oenology. It provides advanced training in viticulture, wine chemistry, microbiology, sensory analysis, and cellar management, combining strong scientific foundations with hands-on technical application. The DNO is the official French qualification required to practice as a professional oenologist and is internationally recognized within the wine industry.
