With 13 conference spaces accompanying it's superior room count, the hotel is one of the largest in the region. The hotel's breathtaking three story lobby, decorated with marble flooring, and brilliant glass chandeliers, embodies the 5 Star luxury experience the Pullman Brand is renowned for.

    Nestled beneath the three story high feature windows of the Pullman Cairns International, Coco's Kitchen + Bar showcases our tropical environment with a wonderful array of local fish and seafood, with an emphasis on high-quality, produce from within the region.

    Executive Chef, Simon Capewell and his team are the masterminds behind the mouth-watering dishes found in the restaurant. With over 25 years' experience in the industry, Simon has followed his passion of experiencing different cultures and this is reflected in the dishes he creates.

    As a member of our established Kitchen team, you will be able to express your passion for first-class cuisine. Your flexibility in adapting to special requests will contribute to creating memorable dining experiences that will see guests returning time and time again.

    Job Description

    The Sous Chef leads the kitchen brigade with the guidance of the Executive Chef. This position is responsible for managing the output from the kitchen and ensuring quality assurance, food management processes, and recipe consistency are all at expected standard. Key duties of the role include:

  • Able to work with the Executive Chef to supervise the quality and consistency in outlet as well as all function orders.
  • Oversee cost control and budgeting, and be able to identify opportunities for improvement of food/labor costs.
  • Be involved in Recruitment, Training and Development of the culinary team.
  • Maintain knowledge of local competition and suppliers as well as keep up with general industry trends.
  • Generous salary - $85,000 plus superannuation.
  • Qualifications

    You will be an experienced chef, with the confidence to share your knowledge and perspective with our enthusiastic kitchen brigade. In the absence of the Executive Chef, you will be expected to run the kitchen as the sole point of leadership, as such you are expected to work a range of shifts including week ends, nights, and public holidays where required.

    To achieve this you will need:

  • A strong background facilitating large banquet events of up to 500pax, as well as Al a Carte.
  • Your experience will include significant time training and working in large 5 star hotels and resorts.
  • You will need a strong knowledge of the HACCP management system.
  • Any prior experience with our systems (ie. Purchase Plus) would help facilitate a smooth transition into the role.
