    du poste

    Missions Générales :

    • Contribue au bon déroulement du service et à la qualité de la production en gérant sa partie
    • Assure de façon autonome la production des plats conformément aux fiches techniques
    • Manage le travail des commis
    • Est responsable d'un secteur de la cuisine et en assure l'organisation, la coordination et le service

    Principales responsabilités :

    Technique métier / production :

    • Fabrique, dresse les plats relevant de sa partie, conformément aux fiches techniques et aux process définies par l'hôtel et le chef de cuisine
    • Veille à la présentation, à la qualité et à la bonne température des plats.
    • Effectue l'envoi des plats dans le respect des délais souhaités par le client.
    • Est amené à réceptionner, contrôler et stocker les marchandises.
    • Adapte son organisation et son rythme de travail en fonction de l'affluence, des événements, et des clients

    Management des équipes / implication transverse :

    • Anime l'équipe dont il a la charge, et crée une bonne ambiance de travail.
    • Organise et contrôle le travail des commis de cuisine et des apprentis(es) pour sa partie.
    • Suit et sensibilise son équipe sur l'optimisation des coûts et la réduction des pertes de matières premières
    • Assure la formation et le perfectionnement des commis de cuisine et des apprentis(es) et stagiaires

    Gestion :

    • Est impliqué dans l'atteinte des objectifs de son service
      • en respectant scrupuleusement les fiches techniques
      • en évitant tout gaspillage et pertes de marchandises
      • en respectant les procédures et les contrôles internes appliqués dans l'hôtel
    • Participe aux inventaires chaque mois
    • Contribue à la bonne gestion du petit matériel en évitant la casse

    Hygiène / Sécurité des personnes / Environnement :

    • Veille à la propreté de son lieu de travail et à la sécurité alimentaire en respectant au quotidien les règles d'hygiène HACCP
    • Respecte les consignes d'utilisation et de sécurité du matériel mis à sa disposition.
    • Applique les règles de sécurité de l'hôtel (incendie...)
    • Respecte les engagements de la « Charte Environnement » pris sur l'établissement (économie d'energie, recyclage, tri des déchets...)
    Qualifications

    Profil requis :

    Formation / Expériences professionnelles :


    • Du CAP au BAC professionnel cuisine


    • Expérience attestant d'un savoir-faire technique maîtrisé sur gros volume (400/600 couverts)


    • Maîtrise de la langue du pays et anglais
